Foodborne/Waterborne Disease

The Disease Surveillance Program shall conduct an epidemiologic investigation of each reported case or suspect case and submit to the Arizona Department of Health Services (AZDHS)  Medsis Program the information required and may exclude a foodborne case with diarrhea from working as a food handler, caring for children in or attending a child care establishment, or caring for patients or residents in a health care institution until the following occurs:

 

  1. Two successive cultures negative for foodborne illness are obtained from stools specimens collected at least 24 hours apart and at least 48 hours after discontinuing antibiotics.
  2. Treatment is maintained for 24 hours and diarrhea has resolved.
  3. Counsel a case about hand washing and concurrent disinfection of contaminated articles.
  4. Notify Environmental Health of facilities that may be source of illness.
